Weekend eats

I'm still getting used to taking pics of meals, so I don't have each meal documented. Overall, the weekend was a win regarding MEALS. Snacks - not-so-much.

Friday my husband made turkey chili for supper. I took a picture of it and can't find it anywhere. What? It was really good and he is becoming quite the cook.

Saturday morning I had a nice egg breakfast with two small blueberry pancakes.

We had a playdate at a global wildlife place about an hour from us. I wondered how my lunch would go. After the safari tour, we were exhausted and hungry. The plan was to get a salad at Arbys because I knew we were going to have a sit-down meal for supper. Well, it ended up being an Arbys roast beef, fries and unsweet tea.

Mainly because the Arbys was in a gas station. I'm not opposed to gas station franchises like Subway. But apparently they had the 750-calorie salad and I wondered how well the salad would hold up under gas station elements. I opted for the meal that was about the same in calories. Let's just say it was OK.

I forgot to take a pic, but we all know what fast food looks like.

Onto supper: We went to a place that has amazing brunches. We usually meet my dad there for breakfast. This was a supper outing.


 I got the house salad with italian dressing.

I also got the chicken and sausage gumbo which was disappointing. It looks weird and tasted like it was heated in the microwave. Can't win them all.



Sunday for breakfast I think I had pancakes again. The problem with these are they are low-cal and low in nutrients.

Lunch was Zoe's shrimp skewer which had a fantastic salad and rice pilaf. The cals ended up being less than I thought. (Again, forgot the pic which is sad because it was the most beautiful thing I've eaten in a while).

I met a friend at Starbucks to deliver her Girl Scout Cookies. I ordered the unsweet green tea which I love, but sitting there, surrounded by folks with hot coffee - ahhhhh ....

Supper was my delicious Applegate spinach, chicken and feta sausage, sweet potato AND an avocado. Loved it all.


However, the freaking Girl Scout cookies!!! I'll post this week what my food diaries have revealed and it's not pretty.

I also plan to start working out again. The goal for both my husband and myself is to get more sleep! We plan on going to bed each night when our daughter goes to bed. This makes for a boring and groundhog-ish week, but we are both seriously lacking energy. I'll see how that goes as well.

Heading into the weekend

Weekends seem to be my downfall. I'll eat quite healthy during the week and boom, here's the weekend! This weekend will be challenging to say the least.

We are going on a mini-safari, eating out with family, delivering Girl Scout Cookies - oh, those darn Samoas!

Here is a sampling of what I've eaten the last couple of days:


My Community Coffee - King Cake flavor. So good!


Smoothie - unsweet almond milk, ripe banana, peanut butter, chia seeds, cocoa powder and ice.


Homemade salad. Dressing is Whole Foods balsamic vinaigrette.

 Last night I had beef stew meat with rice and gravy. That's a little piece of heaven for this Southern girl. (It looked disgusting which is why I didn't take a pic of it). But nobody can eat just ONE serving of rice. I had two servings. Then I followed up with a couple of Thin Mints. Do calories count if "thin" is in the title of the food? ;)

Today I was back to it. I did eat a turkey sandwich from the cafe at my work.

My job recently moved to a shiny, new building and it's fantastic. They have a fresh food service that delivers salads, sandwiches, cheese sticks, yogurt, etc... Only problem is they are on the pricey side so I try to bring my lunch to work most days. Next time I'll take a pic of it.

But, the BREAD is a huge portion so that will be a "sometimes" food. Not good for insulin resistance, but good for my mood.


Another amazing thing about the new building. Sonic-like ice and FILTERED water. Can you tell they are trying to make us healthier?

I usually don't have the opportunity to eat out as much as I will this weekend, so it's going to be hopefully salads and baked fish.

My weight right now is 170. I've lost 6 pounds since I started in January. I've been counting calories on My Fitness Pal mainly to see what I need each day. And it is SHOCKING to see how many calories are in certain foods.

I hate calorie counting and I don't feel it's sustainable. But these past two months have been a learning experience.

I've also paid attention to which foods keep me full longer. While oatmeal does its job, bread does not. I can feel my blood sugar spike and within an hour I"m hungry again.

Oddly enough, my homemade salads keep me full for most of the afternoon.

I'm in a Biggest Loser-esque challenge at work. There are 15 employees participating. Based on what I've heard, I'm doing terrible. I haven't gained, and I've lost about 2.5 pounds, but we are in the second week now and some people have been losing five pounds each week.

Now that I'm fully off the antibiotics from my latest sinus escapade, I figure my appetite will get back to normal.

And to step up my game, I'm going back to workouts next week. This was not my plan for March. I was planning to sit on my big ol' fat booty for 31 days, but I'm in it to win it.

What this blog will be ...

Welcome. I highly, highly doubt I have a single reader other than myself. If I have any readers, yay! If not, that's cool too because this blog will be embarrassing in some ways. BUT will hold me accountable.

I used to write this blog a few years ago, got out of running because of an injury. And am now back. I hope.

So, when I was revamping the blog (name change,etc...) I accidentally deleted my few posts I had on here. I'm researching how to get them back, but honestly I can sum it up in this paragraph:

 2013 I ran a half-marathon. It sucked. I ran it in almost four hours.Yes, four. I thought I had trained good enough. Nope, not nearly. Before that I had run one 5k. Then, after the half I got a nice diagnosis of plantar fasciitis. This went on for oh, about two years. Several cortisone shots, physical therapy, dry needling and a lot of tears, I believe it's gone. Last year, I signed up for several winter races thinking I was back in business. Wrong. A bronchitis death-trap got a hold of me and I was sick for several months blowing away any chance I had for those races.

Here it is, now 2016 and I'm ready. Only, I need to lose some weight first. I will do whatever it takes to avoid getting PF again and the first thing is drop the baggage.

So, this blog will mainly be about stats. My weight, ugh, my diet, my workouts and hopefully soon, my mileage.

I have posted workouts to Twitter and Instagram before, but I feel like what I'm do is nothing compared to what others do on there. Comparison is the thief of joy so I won't be doing that. My little workouts are on the toddler level compared to some out there, and while I'm ok with that, I don't want to post all workouts on those sites.

I have a little family that includes a crazy, crazy cat. I have a full-time job. I like to read. I'm writing a young adult book. I'm about to redo my daughter's room. And other than that, I am hoping to ease back into running.


My husband and moi! Not sure I'll be posting pics of my daughter because of all the weirdos on the web. This is the WORST pic ever. Taken by my daughter, but it's the most recent of me. I promise I don't walk with a crick in my neck.

I'm not sure how often I'll post. I'd like to post at least once a week. But, I don't want to make an official commitment. Yes, I'm that lazy (or that busy right?).
